When it comes to Dips, I have many many favorite ingredients, and Beetroot is by far one of them. Wile attending markets with my little jar of dips, and meeting my “fans” I did hear many many comments on beetroot… usually was ” i hate beetroot but this is amazing”, my favorite is still from one of my best friend…Beets taste like ground…and they do..a little-bit yes. Beets are also versatile, and loaded in antioxidants and plenty of minerals and vitamins good for your body , plus they are super cheap and available almost all year around. The only downside with them, is they take a while to cook or roast..and the peeling…but at the end, really worth it. This dip, takes a bit longer to make, sothis is not something you going to serve if you have unexpected guests, unless you get addicted to it and have a fresh batch in your fridge for those netflix nights.
Ingredients:
(for 2 or 1, or 3 if you like to share)
- 3 medium beets
- 1orange
- 100ml of olive oil
- 4 table spoon of tahina
- salt and pepper
- 1 clove of garlic
- a pinch of ginger powder or fresh grated ginger
- 1 pinch of ground cinnamon
Boil the beets in water, add salt and pepper. They are done when you can easily poke a knife or fork in them and feel soft. Peel them over cold running water. Zest the orange, and squeeze the juice. Add all ingredients in a blender and mix until smooth. Serve chilled , with cellery sticks, chips, crackers, on a cheese plate, with garlic bread, literally in any way you want….you see easy as ABC…
